Hotpot Culture


Hotpot is not only a delicacy,but also contains the connotation of food culture,adding to the enjoyment of people.When eating hot pot,men,women and children,friends and relatives gather around the steaming hot pot,put their arms together and talk,raise their chopsticks and eat,warmth and harmony overflowing,suitable for the family reunion,a traditional Chinese culture.

In the northeast,when people entertain guests,the hot pot has quite a few rules for the placement of the dishes:the front fly after walking,left fish,right shrimp,lightly sprinkled around the cauliflower,that is,flying birds of meat on the front of the hot pot to the mouth of the stove,walking animals of meat on the back of the hot pot,the left side is fish,the right side is shrimp,a variety of shredded vegetables slightly put some,as if"the stars are holding the moon"to show respect.For uninvited guests,two large meatballs are placed at the front of the hotpot,followed by the meat of the animals,signalling you to leave.

In Sichuan,there are also rules for eating hot pot.The seasoning is usually the most basic of onion,ginger,garlic and sesame oil,so that the original flavour of the hot pot can be tasted.There are rules for hot dishes,starting with ingredients such as tripe and duck intestines,and the method is:seven up and eight down,so that the dishes are the most tender.For guests and friends,a hot pot with beer and white wine is the best way to meet the warmth and hospitality of the Sichuan people.

In Taiwan,the hotpot is eaten on the seventh day of the Lunar New Year,and there are seven ingredients used in the hotpot,namely celery,garlic,spring onion,coriander,leek,fish and meat,which mean:"diligence,calculation,wisdom,good fortune,long-lasting happiness,surplus and abundance".
