The Origin of Hotpot


There are two versions of the origin of hotpot: one says that there were hotpots during the Warring States period, and that the historians used clay pots as pots. The other says that hotpot began in the Han Dynasty, and that 'dou' means hotpot. The tomb of the Marquis of Haihang in the Western Han Dynasty has unearthed a hotpot. This shows that hotpot has been used in China for more than 2000 years. The Book of Wei also records that during the Three Kingdoms period, hot pots made of copper were used to cook various kinds of meat such as pork, beef, sheep, chicken and fish, but they were not popular at the time. In the Northern Song Dynasty, hotpot was already very common among the people, and in the taverns of Kaifeng, Bianjing, hotpot was already available in winter. In the Southern Song Dynasty, Lin Hong's recipe for "The Mountain Home" was introduced as a way to eat hot pot with friends. During the Yuan Dynasty, hotpot spread to Mongolia, and during the Ming and Qing Dynasties, hotpot was not only popular among the people, but also became a famous "court dish", made from wild game such as mountain chicken. By the end of the Qing Dynasty and the beginning of the Republic, there were dozens of different hot pots in the country and each had its own characteristics. Hotpot was introduced to Japan from China in 1338 during the Muromachi period. In Japan, hot pot is called sukiyaki, also known as "hoe yaki". Today, hot pot has also spread to the United States, France and the United Kingdom.
